I freaking love thai food, especially Thai food from Thai Chili restaurant. When the menu says extra spicy, its actually really spicy! I hate going to restaurants, looking at the menu to see a chili symbol cautioning the eater of the potential “spiciness” only to be grately disappointed.

Today, I tried the Drunken Noodle with combination meats. (Pan-fried, flat rice noodles with peppers, lettuce, chicken, shrimp, beef, tomatoes, and basil). I made the request for extra spicy, and my face and throat were on fire and sweating profusely. It was freaking awesome.

There is a great increase in suicides and murder-suicides due to our current economy. If you go to Google or Yahoo, you can find plenty of notable resources regarding this. I understand that America stands  out from other nations because we started the fundamentals of capitalism… but money, no matter how much, is worth a life or lives of others. All of these people will be in purgatory or Hell just because they could ride the wave of a bad economy. I keep these people in my prayers, and I hope all of you do too.

Money, although it can bring nice things into your life, is the root of all evil.  It was the greed of the banks, mortgage brokers and real estate agents who created this economic disaster (it’s not Bush’s fault like many of you would like to think). The mortgage business is deregulated, and no one ever stopped these people to issue subprime loans. Honestly, if someone is subprime, the likelihood of that same person making good on payments is slim to none. These are people who are ill-educated in finance and many of those who lost their homes, could NEVER possibly afford their homes. These businessmen only gave these poor people one side of the story, making interest only loans super appealing, never explaining negative amortization…. I can go on for days..

Anyhow, these people made LOTS of money taking advantage others, and I’m glad that their greed consumed them as well, because many of these people in the mortgage business are out of business and broke too. Just because you have money doesn’t mean you need to spend it extravagantly!

So I’ve been on this Mexican food fix. I absolutely LOVE Mexican food, and I’m sorry, AmeriMex Tacobell and Del Taco just won’t make the cut.

My 2 favorite places to eat:

1. Alertos – super greasy, and the carne asada dishes are freaking ono.
2. Los Sanchez – The best Sonora style Mexican food EVER… not to mention over 100 items on the menu to choose from… and cheap imported beer!

Anyhow, I’ve been going to Los Sanchez just about everyday to get their Cerviche Crudo… one of the very few places that I know of that will make cerviche with raw shrimp cooking in lime juice. Why do I love this dish so much? It’s super low in calories, its filling and so refreshing! After eating it enough times this week, I finally figured out how to make it for myself with thanks to my friend Paul and my boyfriend James. (James’ Aunt Elena makes pretty awesome cerviche too).

Here’s what you will need:

1. 1 or 2 tomatoes diced
2. 1 large cucumber diced
3. Half of a red onion (medium), chopped
4. 1 bottle of Nellie & Joe’s Famous Lime Juice (16oz) – or if you can’t find this, you will need about 6-7 limes.
5. Plenty of cilantro, chopped
6. a Pound of Shrimp, deveined, peeled and chopped.
7. Mrs. Renfro’s Habanero Salsa

So add all the diced and chopped ingredients in a large bowl, including the shrimp.. and yes, DON’T cook it. Then, pour lime juice to coat the contents of the bowl. (This is about a quarter bottle). Add more juice as needed, but don’t put too much, because it will be sour. Drain the liquid, only leaving a little bit in the bowl. Then, add the salsa to taste to make it spicy. Give it a good mix, plastic wrap the bowl and leave it in the fridge for an hour.

That should be enough cerviche for a 3-4 people.

February is National Condom Month… and I hope all of you are taking the time to get it on safely. Condoms are probably the closest thing to abstinence in terms of protecting yourself from STIs (Sexually Transmitted Infections). Obviously, abstinence is the only for sure way to prevent just about every mishap that comes along with sex, but let’s be realistic; people are having sex, and they are having stupid sex, making babies going into this stupid world, and stupid sex can lead to STIs.

Condoms are cheap and available to just about everyone. There isn’t a reason for you not to use a condom unless you’re in a committed relationship or you get tested frequently as porn stars. (They get tested every 3-7 days!)

For those of you who make excuses:

1. For those who complain about loss of feeling, get polyurethane condoms. They are ultra-thin, practically transparent, and they conduct body heat extremely well. Sure they cost more, but I think your peen will thank you later after you realized you slept with the town hoe.
2. Cost… Eff you guys. That is the lamest excuse in the book. Any health clinic will give you free condoms. There’s a Planned Parenthood in just about every city. Don’t be a dumb ass.
3. Size… let’s face it… 99% men will not need Magnums. ‘Nuff said… and if you do, just buy the freaking Magnums!

Condoms come in fun colors, flavors, ribbed, lubed… you name it. Just be smart and do society a favor.

The summation of January:

1. The SQ ensured my demise.
2. Crazy uber-preggers lady sues me for damaging her fetus in a car accident although there isn’t a dent or scratch on my car.
3. Extra lame ppl @ work have issues with me @ work bc I’m younger than them and I supervise them.
4. Nacho is probably going to die bc of his poor treatment from his previous owner. (Taking him to the vet AGAIN bc he’s peeing blood)
5. Out of remission officially… not looking forward to that road.

Positives:
1. Building a strong relationship with Jesus and God.
2. I still have my job.
3. Made some new amazing friends.
4. Me and James are 1 year strong and things are really good right now.
5. Hookah is yummy and I’m with my bestest.

Resolutions in progress:
1. Building more muscle to balance out the weight loss.
2. Blog more.
3. Read and understand the Bible.
4. Be more mid-maintenance.
5. Make more things I find on instructables.com

I’m not capable of hating anyone and I’m incapable of ever doing something heinous for revenge or for shits and giggles. I have so many reasons right now to really wish darkness on you, but no one deserves to be in darkness. I forgive you for all the mean things you’ve done, and I pray for your sanity and your emotional well being. I feel sorry for you bc someone must have really hurt you for you to become this way. I pray that you can let go of the deomons weighing down your soul, and walk away from this path of bitterness and find some peace.

This month is National Stalking Awareness Month. This is an extremely important subject, and I really hope all of you who read this take it seriously tell others about how they can protect themselves.

Why is this important to me? I hate to say it, but I am a stalker magnet. Those who know me extremely well know of this fact, and every occurence is serious and always has some sort of negative impact in my life. I also want to state that there is not “typical” stalker. Usually you can’t tell if someone is capable of stalking until it happens.

The scary thing now is that anyone can stalk you. People you may never have met in person or ever spoken to can find you with the internet… and my friends who read this, you know who I’m referencing. Even if you don’t know these people personally, if they can stalk you, they can very well hurt you too… whether it is physical or emotional. For more information about stalking and what actions you can do about it, please check out the Stalking Resource Center for more information regarding stalking.

The story below is something that I haven’t really told too many people. It’s taken me many years of counseling to really be able to talk about it the way I can now.. but I honestly urge anyone who is going through or who has gone through what I have to seek help. You’re not alone, and you should never have to be afraid to live your life. I wished I was stronger then to make that right decision.. and I can only hope this will inspire others.

It’s crazy how much has changed in the past decade for me spiritually. I was rebellious and an atheist, although I was brought up extremely religious. As time past, I became agnostic… and right now, at this point in life, I am finally, truly accepting God and his words. This decision is the best decision I’ve ever made, and I can feel my spirit renewed.

Last week, I bought a study bible, and I admit, I’ve been going through some tough times… and the crazy thing is that I can pick up my Bible, has a problem weighing on my heart, open a random section and find my answer.

I can feel wonderful things happening to me… and Marilyn Monroe said it besy, “Sometimes good things fall apart for even better things to fall together.”
